  • 2 teaspoons vanilla extract
  • 2 large eggs (at room temperature)
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 pound peaches (4 fresh peaches or 4 equivalent canned peaches)
  • 1 tablespoon granulated sugar

How to Make

  • Step 1: Cake Layer:

  • Step 2: Into a bowl, sift together the flour, sugar, baking powder, and salt.

  • Step 3: Add the butter, combining the mixture until it resembles coarse meal.

  • Step 4: Add the egg, blend the mixture well and spread it onto the bottom of a 13" x 9" x 2" baking pan.

  • Step 5: Cheese Layer:.

  • Step 6: In a bowl with an electric mixer. Beat together the cream cheese, 4 tablespoons of sugar, and vanilla until the mixture is combined well.

  • Step 7: Add the eggs, lemon juice, flour, and salt; beat the mixture until it is smooth.

  • Step 8: Spread mixture evenly over the cake batter.

  • Step 9: Slice the peaches thin; arrange them in one layer on top of cheese/layer.

  • Step 10: Sprinkle top with 3 tablespoon sugar.

  • Step 11: Bake in a preheated 350 degrees fahrenheit oven for 20 - 30 minutes or until just golden.

  • Step 12: Sprinkle cheesecake with remaining 1 tablespoons sugar.

  • Step 13: Let cool, cut into bars.
