"Perfect light salad for a hot Summer's day or as a small side salad with a spicy meal. It does not need a dressing but you may pour a small amount of oil from the feta cheese over it. The garlic or the herbed feta go well with the watermelon & cucumbers. There are two brands that I know of that come in the small 100g packages Apetina and Athos."

Step 1

Lightly toss together the watermelon, cucumber & feta.

Step 2

Place in 4 bowls.

Sprinkle the mint on top.
