Step 1
Shell the fava beans, boil in lightly salted water for about 6 minutes
Step 2
Cool the beans until you can handle them, peel off the white skin
Step 3
Place the beans in a buttered oven proof dish
Step 4
While the beans are cooking saute the onion, garlic, tomato and pepper flakes in the teaspoon of oil until just soft
Step 5
Pour onions, tomatoes over the beans, cover with foil and bake in 350f oven for 15 minutes
Step 6
Remove foil, sprinkle with parmesan and continue cooking until the cheese is golden
