Step 1

Grease base and sides of an ovenproof dish (10 cup capacity) with butter.

Step 2

To make the custard, combine all ingredients in a large jug and season with salt and pepper and whisk until combined.

Step 3

Tear muffins into 3cm pieces and place in prepared dish and then add ham, cheese and chives and gently toss to combine and spread over base of dish and pour over the custard and refrigerate, covered overnight.

Step 4

Cook uncovered in a moderate oven (180C) for about 40 to 45 minutes, or until custard is set and top is golden.

Step 5

Cover loosely with foil during cooking if top starts to over brown.

Step 6

Remove and stand for 15 minutes and serve with hollandaise sauce.
