Step by Step Method

Step 1

In a large bowl combine first 6 ingredients. Stir in 1 1/2 cups pizza sauce.

Step 2

Place about 1/4 filling in the center of each eggroll wrapper. Fold bottom corner over the filling, then fold sides towards center of the filling. Moisten the remaining corner with warm water and roll up tightly to seal.

Step 3

In an electric skillet using 1-inch of oil heat oil to 375°F. Fry the pizza rolls for 1-2 minutes on each side or until golden brown. Drain on paper towel.

These pizza rolls are fantastic! I used sliced olives in place of the pepperoni and sprayed them with cooking oil and baked at 425 until golden. I've also made them as directed by frying them. Both ways are delicious. I highly recommend this recipe.

The kids were nuts for these! I left out the pepper but used everything else. Excellent tasting pizza snacks that we moowed down while watching television. Another 10 thumbs up snack for us!
