"A delightful summer dessert that doesn't require heating up the house by turning on the oven. If you try to use lower fat cream cheese the cheesecake will not set up as well. It will still taste good but won't firm up."

Step by Step Method

Step 1

Beat cream cheese until light and fluffy. Add condensed milk and beat until well blended.

Step 2

Stir in lemon juice and vanilla. You may continue to use the mixer on low speed.

Step 3

Pour into crust and chill until firm. At least an hour but overnight is even better.

Step 4

Top with fresh fruit, pie filling or drizzle with a bit of chocolate when serving.
