  • For best results, use boneless, skinless chicken breasts.
  • Choose a salsa that is to your taste - mild, medium, or hot.

  • Substitute 1 pound of boneless, skinless chicken thighs for the chicken breasts. This substitution will provide a juicier and more tender texture to the finished dish.
  • Substitute 1 cup of your favorite marinara sauce for the salsa. This substitution will add a richer flavor to the dish, and you can adjust the seasoning to your preference.

Absolutely the hands down winner for quick into the oven and out to the table with little effort, and the chicken was tender and delicious. My casual reading of the recipe meant we used skinless and boneless chicken breasts instead of bone-in breasts with the skin removed, so we reduced the cook time to 30 minutes total. A sprinkle of green onions on the plated chicken added to the visual presentation, but I think cilantro would have been a better choice, and for a buffet, chicken tenders would be great. Thanks, Dreamer -- a great meal and lots of new ideas.

This is delicious and so easy! I added some grated cheddar/jack blend the last 5 minutes and a dollop of sour cream. This is a really nice looking finished product and is great for a week-night supper as well as for company!
