Step by Step Method

Step 1

Place potatoes in large bowl while warm. Sprinkle with salt and rice wine vinegar and toss. Add all other vegetables, pickles, and eggs.

Step 2

Combine dressing ingredients in small bowl. Whisk to mix thoroughly.

Step 3

Add dressing to vegetables and mix.

Step 4

Garnish by sprinkling the top with paprika and seasoned pepper. Chill at lest 2 hours to allow flavors to blend.

Not our traditional spread this Thanksgiving, but we did have a spiral ham and this yummy potato salad. I adjusted the recipe for two, by cutting it in half. I subbed dill pickle relish for the pickles, and used a yellow onion, as I find the red ones to be too strong. We loved these flavors with our ham!

I made this awhile back to bring to my son's house. It was great with BBQ ribs and grilled corn, and the bowl was pretty near empty after we ate. I did manage to save enough for another meal for the two of us at home. Smart thinking! It was so good!

Used everything but the dill, and we loved it! We don't like sweet relish so this was a great choice for us. Flavors blended well after 8 hours in the fridge. Very tasty!
