Step by Step Method

Step 1

Cut pasta in half before cooking.

Step 2

Cook pasta according to package directions, omitting salt and fat.

Step 3

Add broccoli to pasta during last 3 minutes of cooking time.

Step 4

Drain well; place in large bowl.

Step 5

While pasta cooks, combine dressing and next 4 ingredients; stir well.

Step 6

Pour dressing mixture over pasta mixture.

Step 7

Add chicken, and toss gently.

Step 8

Sprinkle with pepper.

This was quite good and a nice change of pace over the acidic tomato-based sauces that I usually use for my fettuccine dishes. The honey-dijon provides a fantastic flavor base, but it needs more spices or herbs to increase the flavor. I will make this again and try a little basil (maybe oregano) to boost the flavor. But my husband and I really liked this dish. Thanks TeresaS. Yum!
