Step by Step Method

Step 1

Pan Seared Salmon: Heat oil in pan, dust salmon with salt and pepper. Place in hot pan, skin side down. Cook about 5-7 minutes.

Step 2

Add white wine and cook for additional time (until its as done as you like).

Step 3

Take out salmon, make sure wines reduced, and add spinach, mushrooms and tomatoes cook until spinach just wilted. Add butter; toss.

Step 4

Plate the salmon, then pour the veggies and sauce over.

This was easy and refreshing. I used 1 cup of spinach as opposed to 1/4 cup and I poured in some extra wine. I accidentally put the veggies on top instead of underneath the fish. Thanks, Dee.

Delicious salmon! We loved the sauce with the combination of spinach, mushrooms, and tomatoes. Next time, I might double the wine to get more of the liquid sauce. So good! Thank you!

This is going right into my Best Of file. Yummmm....Yummmm. Simple, easy, healthy and I loved every moment of every bite. This hit all my favorite flavor senses. Followed as directed, except used extra wine because we like it a bit saucy, a combination of Roma and grape tomatoes, and also a combination of arugula and spinach (needed to use up the arugula). This is being bookmarked for making it again very soon. Thanks so much, Dee, for sharing. Made it for FYC.
