Step 1: Pan Seared Salmon: Heat oil in pan, dust salmon with salt and pepper. Place in hot pan, skin side down. Cook about 5-7 minutes.
Step 2: Add white wine and cook for additional time (until its as done as you like).
Step 3: Take out salmon, make sure wines reduced, and add spinach, mushrooms and tomatoes cook until spinach just wilted. Add butter; toss.
Step 4: Plate the salmon, then pour the veggies and sauce over.
