Step by Step Method

Step 1

Preheat oven broiler.

Step 2

Whisk the eggs until frothy. Stir in milk, salt and pepper.

Step 3

Heat butter over medium-high in a large, heavy (ovenproof) skillet. When butter foams, pour in the egg mixture.

Step 4

Cook eggs, pressing the edges to the center with a spatula, allowing liquid to run under omelet to cook.

Step 5

Sprinkle crumbled cheese over surface. Place under the broiler for a few minutes to brown.

Step 6

Top with chopped dill and serve immediately.

Thoroughly enjoyed this for my breakfast. Only change is I omitted the salt. The blue cheese and dill give this omelette a wonderful taste.

Very easy to make. I usually flip my omelettes and this one was especially easy to make because you just finish it in the oven. All blue cheese lovers will enjoy this recipe! No salt needed because of the saltiness of the cheese. Made by a Smok'in Chef for CQ 2017

Being of Danish Heritage I grew up loving Blue Cheese and this omelet adds one more way for me to enjoy it. I cut the recipe back to a 2 egg one serving omelet. I loved it, it was a perfect Sunday brunch meal that I will enjoy again

OK, I'm still fighting with my electric stove. I used to make picture-perfect omelets, now they all turn into scrambled eggs. But, no matter - the flavor was super - loved the Danish blue cheese on top. I also had some mushrooms I needed to use, so sautéd them and sprinkled on top to serve. I also had a ripe pear to use - nice flavor combo with the blue cheese. DH does not like blue cheese, so I used sharp white cheddar on his (left over from Wales - lol) In conclusion: will definitely make "omelets" with blue cheese again!!!
