Step by Step Method

Step 1

Season to taste with salt and pepper into the beaten eggs.

Step 2

Beat together until well blended.

Step 3

Melt the margarine in a skillet over medium heat.

Step 4

Add the curry powder, don't burn.

Step 5

Pour in the eggs, and cook, stirring constantly until firmed to desired temperature, 3 to 5 minutes.

Step 6

Add shredded cheese to taste until melted.

Hubby made this for my breakfast this morning serving with some toast. The only change he made though was to dry fry the curry powder then whisk it into the egg mix before cooking. Thank you Dee for a delicious breakfast that bought back memories of my Dads curry egg. Made for For Your Consideration tag game at FF&F.

Oh yes, these eggs are delicious! Instead of salt, I used a light sprinkling of lemon pepper, added an extra egg for the two of us and increased the Madras Curry Powder a wee bit. DH was very happy with his brekky this morning as was I. Thank you for sharing your recipe Dienia! Made for Billboard Recipe Tag.

Oh, these scrambled eggs are good! Though I love curry, I wasn't sure what to expect, seeing I had never had eggs flavored with curry. Boy, are these yum. Next time, I'm making extra! So good! Thank you, Dee, for sharing.
