Step by Step Method

Step 1

Place cucumber slices into a colander and sprinkle with salt and vinegar; toss and leave them for 30 minutes to drain off the excess moisture.

Step 2

With a serrated knife, trim and discard the crusts from the bread; set aside.

Step 3

In a bowl of an electric mixer add the cream cheese, goat cheese, lemon pepper, salt and milk and then mix until blended. Stir in herbs (thyme - parsley).

Step 4

On one side of six bread slices, spread a thick layer of the cream cheese mixture; top with watercress and then add the cucumber slices on top; cover with the remaining bread slices.

Step 5

With a serrated knife, cut each sandwich diagonally into 2 triangles.

Step 6

Serve immediately or cover with paper towels and refrigerate until ready to serve.

My girls and I love cucumber sandwiches, so this one got a big thumbs up from all of us. The cucumber slices retained all their natural crispiness which provided a wonderful crunch, but the cheese and herb blend was wonderful and the perfect foil to add great flavor to these sammies – the goat cheese was the bomb. Next time, I will add a bit more of the herbs, but it was perfect as is. In place of the watercress, used arugula due to availability. We will have these again with our English-style tea. Thank you, ellie, for sharing.
