Ingredients

The ingredients are:
  • 1 English cucumber, thinly sliced
  • Salt
  • White vinegar
  • 12 slices, white bread
  • 8 ounces cream cheese, room temperature
  • 4 ounces Irish goat cheese, room temperature
  • 1/2 teaspoon lemon pepper
  • Sea salt
  • 1/3 cup milk
  • 1/2 teaspoon thyme leaves, minced (fresh)
  • 1/2 teaspoon tarragon leaves, minced (fresh)
  • 3 tablespoons parsley, minced
  • 1 cup watercress leaves

How to Make

  • Step 1: Place cucumber slices into a colander and sprinkle with salt and vinegar; toss and leave them for 30 minutes to drain off the excess moisture.

  • Step 2: With a serrated knife, trim and discard the crusts from the bread; set aside.

  • Step 3: In a bowl of an electric mixer add the cream cheese, goat cheese, lemon pepper, salt and milk and then mix until blended. Stir in herbs (thyme - parsley).

  • Step 4: On one side of six bread slices, spread a thick layer of the cream cheese mixture; top with watercress and then add the cucumber slices on top; cover with the remaining bread slices.

  • Step 5: With a serrated knife, cut each sandwich diagonally into 2 triangles.

  • Step 6: Serve immediately or cover with paper towels and refrigerate until ready to serve.
