Step 1: Place cucumber slices into a colander and sprinkle with salt and vinegar; toss and leave them for 30 minutes to drain off the excess moisture.
Step 2: With a serrated knife, trim and discard the crusts from the bread; set aside.
Step 3: In a bowl of an electric mixer add the cream cheese, goat cheese, lemon pepper, salt and milk and then mix until blended. Stir in herbs (thyme - parsley).
Step 4: On one side of six bread slices, spread a thick layer of the cream cheese mixture; top with watercress and then add the cucumber slices on top; cover with the remaining bread slices.
Step 5: With a serrated knife, cut each sandwich diagonally into 2 triangles.
Step 6: Serve immediately or cover with paper towels and refrigerate until ready to serve.
