Step by Step Method
Step 1
Cook fries according to packet directions for about 20 to 25 minutes.
Step 2
Meanwhile, place one bag of the croutons in a snap lock bag and lightly crush with a rolling pin to form chunks and add seasoning and parmesan and seal bag and shake until combined.
Step 3
Place fish on a oiled, large oven tray and spread top evenlyu with Dijonaise and sprinkle with crouton mixture, lightly pressing to make sure the crumb mix sticks to the fish.
Step 4
Cook in a very hot oven (220C) for about 10 to 12 minutes or until crumbs are golden and fish is cooked through.
Step 5
To make salad, combine lettuce, parmesan and remaining bag of croutons in a serving bowl and drizzle with dressing.
Step 6
Serve fish with fries and salad.
