Step by Step Method

Step 1

N a shallow bowl, mix the first nine ingredients.

Step 2

Place flour and eggs in separate shallow bowls.

Step 3

Dip both sides of chicken in the flour, then in egg, then in crumb mixture, patting to help coating adhere.

Step 4

Place on a greased baking sheet. Spritz tops with olive oil spray.

Step 5

Bake at 375° for 25-30 minutes or until a thermometer reads 170°.

Great chicken. It turned out very moist and had a nice crunch and great flavor. I did two breasts, and pounded them out a bit to even the thickness so they would cook evenly.

This is very good chicken which we enjoyed - easy to make and uses ingredients we almost always have on hand. I skipped the parsley, but otherwise made as directed. Thanks for sharing!
