  • 2/3 cup panko bread crumbs
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon minced fresh oregano (or 1 teaspoon dried oregano)
  • 1 tablespoon minced fresh basil (or 1 teaspoon dried basil)
  • 2 teaspoons minced fresh parsley, minced
  • 2 garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs (lightly beaten)
  • 6 (5 ounces each) boneless skinless chicken breast halves
  • Olive oil spray

How to Make

  • Step 1: N a shallow bowl, mix the first nine ingredients.

  • Step 2: Place flour and eggs in separate shallow bowls.

  • Step 3: Dip both sides of chicken in the flour, then in egg, then in crumb mixture, patting to help coating adhere.

  • Step 4: Place on a greased baking sheet. Spritz tops with olive oil spray.

  • Step 5: Bake at 375° for 25-30 minutes or until a thermometer reads 170°.
