Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

Toss the grape tomatoes with 2 teaspoons olive oil, salt and pepper. Place in an ovenproof dish and roast for 12 to 15 minutes, until the tomatoes begin to burst. Remove from oven, stir in balsamic vinegar and set aside.

Step 3

Brush both sides of the baguette slice with olive oil and place on a baking sheet. Bake until golden, 10 to 12 minutes.

Step 4

Stack and roll up the basil lives, then slice thinly.

Step 5

Spread 1/2 tablespoon of ricotta on each toast, top with a tomato, sprinkle with basil and finish with salt and pepper.

Woweee - This is soooo darn good and everyone of us gave it thumbs up. I used a combination of regular grape tomatoes, heirloom grape and a bit of roma tomaotes. Also rubbed a couple of garlic cloves on the toasted crostini when they came out of the oven. It's going right into my Best Of file. Thank you, Teresa, for sharing. Made it for FYC.
