Step 1
Preheat oven to 400°F.
Step 2
Toss the grape tomatoes with 2 teaspoons olive oil, salt and pepper. Place in an ovenproof dish and roast for 12 to 15 minutes, until the tomatoes begin to burst. Remove from oven, stir in balsamic vinegar and set aside.
Step 3
Brush both sides of the baguette slice with olive oil and place on a baking sheet. Bake until golden, 10 to 12 minutes.
Step 4
Stack and roll up the basil lives, then slice thinly.
Step 5
Spread 1/2 tablespoon of ricotta on each toast, top with a tomato, sprinkle with basil and finish with salt and pepper.
