Step by Step Method
Step 1
In saucepan, bring cream to boil. Lower heat and let cream reduce a few minutes. Stir in Emmental cheese, nutmeg and pepper. Cook stirring over low heat until cheese has melted. Remove from heat and let cool.
Step 2
For crepes: In large bowl, combine flour, salt, baking powder and sugar. Beat in lightly eggs, milk, water until smooth. In large skillet, melt a generous amount of butter. Pour batter in skillet, a little at a time, and brown crepe on each side over low heat. Repeat procedure 15 times, adding butter as required. Set aside to cool.
Step 3
Place a slice of ham on each crepe then lightly drizzle with cheese mixture. Roll crepes, slice and secure with toothpick. Serve immediately or refrigerate.
