Ingredients

The ingredients are:
  • 1 cup heavy cream ( whipping cream)
  • 1 cup Emmental cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Pepper, to taste
  • 1 pound black forest ham, sliced
  • CREPES
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons powdered sugar
  • 2 large eggs
  • 2/3 cup milk
  • 1/3 cup water

How to Make

  • Step 1: In saucepan, bring cream to boil. Lower heat and let cream reduce a few minutes. Stir in Emmental cheese, nutmeg and pepper. Cook stirring over low heat until cheese has melted. Remove from heat and let cool.

  • Step 2: For crepes: In large bowl, combine flour, salt, baking powder and sugar. Beat in lightly eggs, milk, water until smooth. In large skillet, melt a generous amount of butter. Pour batter in skillet, a little at a time, and brown crepe on each side over low heat. Repeat procedure 15 times, adding butter as required. Set aside to cool.

  • Step 3: Place a slice of ham on each crepe then lightly drizzle with cheese mixture. Roll crepes, slice and secure with toothpick. Serve immediately or refrigerate.
