"This is just delicious. Serve with my Grilled Romain with a Creamy Roasted Garlic Dressing; or your favorite greens. Just a nice dressing. It will last up to a week in the refrigerator. It does take a bit of time because the garlic needs to be roasted, but the rest is just mix and chill. Very easy to make. Prep time includes roasting the garlic."

Step by Step Method

Step 1

Garlic ... Easy roasted garlic. Cut off the top of the garlic, just a small slice and drizzle with olive oil. About 1 teaspoon. Wrap in foil and put in a 400 degree oven for approximately 30-40 minutes until the garlic is tender and soft. Cool and then squeeze out the garlic in a small bowl or measuring cup.

Step 2

Dressing ... Add everything to the roasted garlic and mix well. I prefer to use a small tupperware container so I can just add everything, mix, seal and refrigerate. And when you are ready to serve the dressing, just shake and serve. Also, make ahead if possible, it saves time.

Step 3

Serve ... Serve with grilled romaine or your favorite greens and ENJOY!

I roasted a whole bunch of garlic and whipped up this dressing in about 2 minutes. It came out so good. I let it chill for several hours to give the flavors time to mix in together and it was just what I was looking for to top my salad. I had it over a baby spinach salad with my favorite veggies and I will make this again soon. I will keep this in the fridge so I can grab it and make me a salad anytime!
