Step by Step Method
Step 1
Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender, adding the broccolini during the last 2 minutes of the cooking and then drain reserving 1/3 cup of cooking liquid and then return pasta and broccolini to the pan.
Step 2
Place cream and reserved cooking liquid in a large frying pan over a moderate heat and bring to the boil and then reduce heat to low and simmer for 3 minutes or until reduced slightly.
Step 3
Add tomato, chicken and pasta mixture and toss to combine.
Step 4
Serve sprinkled with parmesan and black pepper.
