Ingredients

The ingredients are:
  • 325 grams dry fettuccine pasta
  • 350 grams broccolini (2 bunches, coarsely chopped)
  • 1 cup cream (extra-light thickened cream)
  • 125 grams cherry tomatoes (halved)
  • 375 grams cooked chicken (skinless, 3 cups, shredded)
  • 1/2 cup parmesan, grated (fresh)

How to Make

  • Step 1: Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender, adding the broccolini during the last 2 minutes of the cooking and then drain reserving 1/3 cup of cooking liquid and then return pasta and broccolini to the pan.

  • Step 2: Place cream and reserved cooking liquid in a large frying pan over a moderate heat and bring to the boil and then reduce heat to low and simmer for 3 minutes or until reduced slightly.

  • Step 3: Add tomato, chicken and pasta mixture and toss to combine.

  • Step 4: Serve sprinkled with parmesan and black pepper.
