Step 1
Bring a large pot of water to a boil; add rice vermicelli and cook 15 minutes, until tender. Drain and keep warm.
Step 2
Meanwhile, heat butter in a large skillet over medium heat; add onion and parsley and cook, stirring frequently, 2-3 minutes, until softened.
Step 3
Whisk flour into milk, then whisk into skillet; cook 1 minute, then add cheese and stir until melted (about 2-3 minutes).
Step 4
Add crab meat and bacon, reduce heat to medium-low and simmer, stirring occasionally, 5 min or until completely heated through.
Step 5
Add vermicelli to sauce and stir to combine; heat another 5 or so minutes, until hot.
Step 6
Serve garnished with additional parsley or grated Swiss cheese, if desired.
