Ingredients

The ingredients are:
  • 2 ounces rice vermicelli
  • 2 tablespoons butter
  • 1/2 cup green onion (sliced thin)
  • 1/2 cup parsley (fresh, chopped)
  • 2 tablespoons whole wheat flour
  • 2 cups whole milk (warmed)
  • 3/4 cup low-fat Swiss cheese (grated)
  • 8 ounces crab meat (cooked, can use imitation but it's not as good)
  • 1/2 cup bacon (cooked and crumbled)
  • 1/8 teaspoon white pepper

How to Make

  • Step 1: Bring a large pot of water to a boil; add rice vermicelli and cook 15 minutes, until tender. Drain and keep warm.

  • Step 2: Meanwhile, heat butter in a large skillet over medium heat; add onion and parsley and cook, stirring frequently, 2-3 minutes, until softened.

  • Step 3: Whisk flour into milk, then whisk into skillet; cook 1 minute, then add cheese and stir until melted (about 2-3 minutes).

  • Step 4: Add crab meat and bacon, reduce heat to medium-low and simmer, stirring occasionally, 5 min or until completely heated through.

  • Step 5: Add vermicelli to sauce and stir to combine; heat another 5 or so minutes, until hot.

  • Step 6: Serve garnished with additional parsley or grated Swiss cheese, if desired.
