Step by Step Method

Step 1

Preheat oven to 400 degrees Fahrenheit.

Heat 1 tablespoon oil

Step 3

Add onion, apple, garlic.

Cook until soft

Remove.

Cut chicken into small bites

Season to taste

Add remaining oil to skillet

Fry until browned.

Add flour, stirring to coat chicken.

Add tomatoes; cook until thickened.

Add raisins, parsley, curry powder, and thyme; mix.

Step 13

Add apple mixture; simmer 5 minutes.

Step 14

Pour into 2 quart baking dish.

Step 15

Season to taste

Step 16

Roll puff pastry 1 inch longer than baking dish

Step 17

Place over chicken mixture

Step 18

Cut slits.

Step 19

Bake 30 minutes.

Chef Potpie

What a unique recipe for Country Captain, utilizing puff pastry! This caught my eye and we just had to try it, and I'm so glad we did. Super easy to make and very tasty, it is also a pretty dish to serve. Using an 8x8 baking dish, my sheet of pastry fit nicely right on top without rolling or fussing. The Sri Lankan curry powder I used added a warm spiciness, and hubby added sambal at the table for more heat. I will be making this again!
