"I found the base recipe for this on the web in 2004 and made s few changes. It is top notch for breakfast or dinner. I have added some choppoed olives and dry sherry right before serving to make it real special also."

Step 1

Heat a large non stick frying pan over medium heat and add the chorizo and cook, turning occasionally for 5 mins or until golden brown.

Step 2

Add the mushroom and garlic and cook stirring for 5 minutes or until they are softened.

Step 3

Stir in the rosemary, marjoram and thyme and toss until combined.

Step 4

Heat through.

Step 5

Serve immediately.

A belated review on a recipe that has seen to repeats. Great for brunch, served over pasta makes for a wonderful evening meal. Using fresh herbs from my garden, other than subbing the marjoram which was unavailabe with dry I followed through as posted . Enjoyed, looking forward to serving this to family and friends.

Bergy (RIP" Forever in our Kitchen)

Wonderful flavour in this simple recipe. I did not have fresh herbs available so used dried. When my herb garden starts producing I will make this again. This time I just mixed the herbs together and sprinkled them on the chorizo just before serving. Thanks Shadows for a delicious dinner. Made again 26 march 2018 A local Butcher makes thesechorizo sausages and says" I use a Mexican recipe with wine". I don't know about that but I do know this easy, simple recipe with these sausages is delicious.I used fresh rosemary & Thyme but I could not find fresh Marjoram so used 1 teaspoon dried. Lee I will be making this recipe again the next time I buy Chorizo sausages.
