"I love banana bread, and I love bananas combined with chocolate. Which means this sounds fabulous to me. I found the recipe in a fundraiser cookbook for Stray Rescue of St. Louis. The recipe was credited to Caitlin Deneau."

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Grease a loaf pan (or spray with cooking spray).

Step 3

Mix sugar, bananas, oil (or applesauce sub) and eggs into a large bowl. Stir in remaining ingredients. Pour batter into pan.

Step 4

Bake until wooden pick inserted in center of bread comes out clean, 60-70 minutes.

Step 5

Let cool 10 minutes, then loosen the sides of the pan using a knife and remove loaf. I remove the loaf by placing a cooling rack on top of the loaf pan, flipping it over using pot holders, then quickly turning the bread back rightside up. Cool completely before slicing.

Love this recipe. DDinlaw asked me to bring banana bread to brunch after my granddaughters baptism. I made 4 mini-loaves. I struggle making 1 big loaf as I never seem to be able to get it to bake in the middle without the sides getting too done. Perfect little recipe. Thanks Karen~
