Step by Step Method

Step 1

In a bowl, make sauce by mixing together limeade, soy sauce, onion, garlic, curry powder, coriander, salt, ginger and red pepper.

Step 2

Place the chicken on a prepared grill, skin side up, about 8 inches from the heat; cook, turning every 10 minutes, for about 30 minutes.

Step 3

Baste with sauce and continue cooking, turning, and basting with sauce every 5 minutes, about 20 minutes longer or until chicken is fork tender.

I used what we call a Maryland cut (thigh and drum left intact) and baked in the oven at 175C fan forced for 45 minutes basting about every 10 to 15 minutes and the end result was beautifully moist chicken full of flavour. I did make 4 slashes in the flesh to allow the marinade to seep into the flesh, also as we do not get frozen limeade here I used the juice of 1/2 a lime which worked well for me but as I have not tasted the recipe with limeade I cannot compare. Delicious! I used bone-in chicken breasts and leg quarters. I used the mix to baste my chicken as it grilled. The chicken needed no other seasoning. It was wonderful. Made for your win on Superbowl Sunday 2016! Congrats!!

Made this with Teeny Tiny Spice Co. of Vermont's West African curry powder. Cut the salt to 1/2 tsp and used low-sodium soy sauce due to my diet requirements. Really tasty!

Delish! This was so easy and so flavorful. All of the ingredients mixed together well without anything overwhelming the others. This will be a frequent repeat at my house. Even my grandson who doesn't like curry loved this. Thanks Mike for a nice winner. Made for PRMR tag.
