Step by Step Method

Step 1

Preheat oven to 325º.

Step 2

Combine first 8 ingredients in a large bowl, stirring well.

Add chicken; toss to coat.

Step 4

Arrange chicken in a single layer in a 13 x 9-inch baking dish coated with cooking spray.

Lightly spoon flour into a dry measuring cup; level with a knife.

Step 6

Combine flour, juice, and broth, stirring with a whisk until smooth.

Step 7

Sprinkle flour mixture over chicken, tossing to coat.

Step 8

Top chicken with olives and lemon.

Step 9

Bake at 325º for 1 hour or until thermometer registers 180º.

Step 10

Serving size: 2 thighs and about 1/3 cup sauce.

Daily Inspiration

Delicious - full of flavor! I have to say that I was a little concerned with the instructions as I wasn't quite sure of the outcome, but the chicken was moist, delicious and the sauce was really nice. DH enjoyed it and really liked the addition of the pimento-stuffed olives.
