  • 2 pounds skinless chicken thighs (about 8)

  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • 14 1/2 ounces low-sodium chicken broth (fat-free)
  • 91 grams pimento-stuffed olives (24 olives olives, coarsely chopped)
  • 8 lemon wedges

How to Make

  • Step 1: Preheat oven to 325º.

  • Step 2: Combine first 8 ingredients in a large bowl, stirring well.

  • Step 3: Add chicken; toss to coat.

  • Step 4: Arrange chicken in a single layer in a 13 x 9-inch baking dish coated with cooking spray.

  • Step 5: Lightly spoon flour into a dry measuring cup; level with a knife.

  • Step 6: Combine flour, juice, and broth, stirring with a whisk until smooth.

  • Step 7: Sprinkle flour mixture over chicken, tossing to coat.

  • Step 8: Top chicken with olives and lemon.

  • Step 9: Bake at 325º for 1 hour or until thermometer registers 180º.

  • Step 10: Serving size: 2 thighs and about 1/3 cup sauce.
