"This is such a simple recipe, easy to make and it tastes darn good too. When I use lime juice in any marinade I am very careful not to marinate too long as the lime juice "cooks" the meat and can toughen, in this case, the chicken. If you are using bamboo skewers soak them for an hour in water. I prefer the long metal skewers for this recipe, allowing 1 skewer per serving. This recipe lends itself well for BBQ"

Step 1
Thread your skewers - alternating a vegetable with chicken, allowing 6 chicken pieces per skewer. You may do this early in the day and refrigerate the skewers
Step 2
Mix together The lime juice, cilantro, cumin and oil.
Step 3
15 minutes before baking paint the skewers on all sides with the lime mixture
Step 4
Place in 375f preheated over and cook for about 20 minutes or until the chicken is cooked.
