  • 4 large (1 pound) boneless skinless chicken breasts (cut into 1 inch cubes,24 pieces)
  • 160 grams mushrooms (fresh, 8 medium whole)
  • Red bell pepper (8 pieces, 1 inch)
  • Sweet onion wedges (8 pieces, separated into 3 layer sections)
  • Zucchini (8 pieces, 1/2 inch slices)
  • 135 grams cherry tomatoes (8 tomatoes)
  • 4 tablespoons lime juice (fresh)
  • 4 tablespoons cilantro, chopped (fresh)
  • 1 teaspoon cumin
  • 2 tablespoons olive oil (extra virgin)
  • Salt and pepper to taste

How to Make

  • Step 1: Thread your skewers - alternating a vegetable with chicken, allowing 6 chicken pieces per skewer. You may do this early in the day and refrigerate the skewers

  • Step 2: Mix together The lime juice, cilantro, cumin and oil.

  • Step 3: 15 minutes before baking paint the skewers on all sides with the lime mixture

  • Step 4: Place in 375f preheated over and cook for about 20 minutes or until the chicken is cooked.
