Step by Step Method
Step 1
In a large bowl, combine all the marinade ingredients. Add in the chicken cubes, then toss really well the chicken with the marinade. Place in refrigerator for4 hours.
Step 2
Preheat grill.
Step 3
Soak 8 bamboo skewers in water for 30 minutes.
Step 4
To make the peanut sauce, combine all the ingredients in a bowl; mix well to combine. Set aside.
Step 5
Thread chicken cubes onto the water-soaked bamboo skewers.
Step 6
Place chicken on the grill rack coated with cook spray; grill for 5 to 7 minutes on each side or until chicken is done.
Step 7
Serve with peanut sauce on the side.
