Step 3: Soak 8 bamboo skewers in water for 30 minutes.
Step 4: To make the peanut sauce, combine all the ingredients in a bowl; mix well to combine. Set aside.
Step 5: Thread chicken cubes onto the water-soaked bamboo skewers.
Step 6: Place chicken on the grill rack coated with cook spray; grill for 5 to 7 minutes on each side or until chicken is done.
Step 7: Serve with peanut sauce on the side.
