Step 1

Cut chicken into thin strips and place in a 9 x 13 inch baking pan coated with non-stick cooking spray.

Step 2

Place onion slices in a bowl and microwave for 1 minute, to soften.

Step 3

Top chicken with onions, sun-dried tomatoes and mushrooms.

Step 4

Mix all remaining ingredients together, except parmesan cheese, and pour over the chicken mixture.

Step 5

Bake uncovered at 350 degree Fahrenheit until cooked through, 45 minutes to an hour.

Step 6

Sprinkle with parmesan cheese if using and serve.

No special items needed.



Such a good recipe I've already made it twice. Excellent for weeknight cooking. First time I made it I followed the recipe to a tee, and served it over brown rice. It was great!! The second time I made I followed the recipe but added a can of tomato paste to thicken the sauce. I also added some fresh peppers and hot sauce. this time I served it over whole wheat pasta. Again the results were great! Plan on making this one again :)
