Step 1: Cut chicken into thin strips and place in a 9 x 13 inch baking pan coated with non-stick cooking spray.
Step 2: Place onion slices in a bowl and microwave for 1 minute, to soften.
Step 3: Top chicken with onions, sun-dried tomatoes and mushrooms.
Step 4: Mix all remaining ingredients together, except parmesan cheese, and pour over the chicken mixture.
Step 5: Bake uncovered at 350 degree Fahrenheit until cooked through, 45 minutes to an hour.
Step 6: Sprinkle with parmesan cheese if using and serve.
