Chicken Hummus Bowls

Step by Step Method
Step 1
Position oven rack to upper third of oven and preheat the broiler to high.
Step 2
Line a rimmed baking sheet with foil.
Step 3
Toss the chicken cubes with 1 T of the oil, cumin, paprika, cayenne, and 1/8 t. of the salt. Spread evenly over the foil-lined pan. Broil the chicken until just cooked through - approx. 7-10 min. (I think I broiled mine a bit longer than the 10 min. because I wanted my chicken to be well-browned - use your judgement.)
Step 4
Meanwhile, mash the garlic with the remaining 1/8 t. of salt into a paste using a fork. Transfer this to a medium-sized bowl and whisk in the lemon juice and the remaining 2 T. of the oil. Add the chicken and let it sit for 5 minutes, stirring occasionally.
Step 5
Divide the hummus into 4 shallow bowls. Tope with the chicken and any remaining dressing from the bowl. Artfully arrange the the remaining ingredients: cucumber, tomatoes, red onion, and parsley.
