"This is a meal I could happily eat every week. Luckily, it's pretty healthy and easy to make! I got this recipe, and slightly tweaked it, from my current issue of Eating Well magazine. I absolutely love the flavor and texture combinations. I hope you do, too!"

Step by Step Method

Step 1

Position oven rack to upper third of oven and preheat the broiler to high.

Step 2

Line a rimmed baking sheet with foil.

Step 3

Toss the chicken cubes with 1 T of the oil, cumin, paprika, cayenne, and 1/8 t. of the salt. Spread evenly over the foil-lined pan. Broil the chicken until just cooked through - approx. 7-10 min. (I think I broiled mine a bit longer than the 10 min. because I wanted my chicken to be well-browned - use your judgement.)

Step 4

Meanwhile, mash the garlic with the remaining 1/8 t. of salt into a paste using a fork. Transfer this to a medium-sized bowl and whisk in the lemon juice and the remaining 2 T. of the oil. Add the chicken and let it sit for 5 minutes, stirring occasionally.

Step 5

Divide the hummus into 4 shallow bowls. Tope with the chicken and any remaining dressing from the bowl. Artfully arrange the the remaining ingredients: cucumber, tomatoes, red onion, and parsley.

As you said, I could have this every week! OMG - that chicken! I made a homemade garlic hummus that was smooth and silky - such a great complement for the lemony garlicky yumminess of the chicken and the dressing. My parsley looked pretty end-of-life, so subbed cilantro. Next time (and there will be many NEXT TIMES), I'll still cut the recipe in half, but double the entire dressing, because we both wanted a bit more. Ashamed to say that I almost licked the plate. This was perfectly fresh and refreshing on a hot, steamy, thundery Florida summer evening. Bet this would be good with shrimp, too. Into my Best of 2022 file this goes... Daily Inspiration

What a great healthy and filling lunch we had today. Wouldn't change a thing. Easy to make and I used purchased garlic hummus. My hubby really liked it too and he's not a big fan of cucumber - still gave it a big thumbs up. : )
