"Ready in 20 minutes. Now you can't beat that! Here is a delicious appetizer, but we love them for lunch too. I made them for Super Bowl Sunday awhile back and my hubby went nuts, so I decided to post it here for everyone to try. Hope you like them!"

Step by Step Method

Step 1

Preheat oven to 400 degrees.

Step 2

Shred the chicken, and add to a large bowl.

Step 3

Pour enchilada sauce over chicken, then add cheese.

Step 4

Toss everything together so that the chicken is fully coated in the sauce, and covered in cheese.

Step 5

Spread one quarter of the mixture onto a large tortilla, and roll up tightly.

Step 6

Cut into 1 1/2 inch slices using a serrated knife.

Step 7

Place on ungreased baking sheet.

Step 8

Repeat with remaining tortillas and chicken.

Step 9

Bake for 10 minutes.
