Ingredients

The ingredients are:
  • 1/2 pound boneless skinless chicken breasts (cooked, 2 chicken breasts)
  • 3/4 cup enchilada sauce
  • 1 cup shredded cheese (I used Monterey Jack)
  • 280 grams tortillas (4 whole wheat, 10 inch)

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Shred the chicken, and add to a large bowl.

  • Step 3: Pour enchilada sauce over chicken, then add cheese.

  • Step 4: Toss everything together so that the chicken is fully coated in the sauce, and covered in cheese.

  • Step 5: Spread one quarter of the mixture onto a large tortilla, and roll up tightly.

  • Step 6: Cut into 1 1/2 inch slices using a serrated knife.

  • Step 7: Place on ungreased baking sheet.

  • Step 8: Repeat with remaining tortillas and chicken.

  • Step 9: Bake for 10 minutes.
