Step by Step Method

TO PREPARE THE SUN-DRIED TOMATO SAUCE


Step 1

Place butter, garlic, and onion in a large skillet over medium heat and sauté until garlic and onion are tender and transparent.

Step 2

Add white wine and lemon juice.

Step 3

Increase heat to medium-high and simmer to reduce by half.

Step 4

Reduce heat to low. Add cold butter one piece at a time.

Step 5

Add sun-dried tomatoes, basil, salt, and pepper and stir to blend ingredients. Set aside.

TO PREPARE THE CHICKEN


Step 6

Reduce charcoal briquettes to white-hot coals.

Step 7

Brush chicken breasts with olive oil and sprinkle with salt and pepper.

Step 8

Grill chicken over hot coals 15 to 20 minutes or until cooked through.

Step 9

Divide goat cheese evenly between chicken breasts, placing some on each breast for the last two minutes of cooking.

Step 10

Place cooked chicken on serving platter and spoon Sun-Dried Tomato Sauce over chicken.

The minute I saw this I had to print it off. What a lovely and very tasty meal it made! With some Italian bread with oil and herbs for dipping, it was the perfect fit. Great tasting and company worthy!

This is Good! I used chicken tenders and grilled it on the stovetop on our a cast iron grill pan. Who said you can only grill outdoors! From the goat cheese topping to the sauce, it was Perfect! If my husband knew that was goat cheese over the top, he wouldn't have a thing to do with it, but a little white lie, telling him it's feta, made him eat it. He was calling my daughters over to tell them all about that great Feta over the chicken. Us girls were winking All Over the Place. I did however add additional onion to the sauce, just because I didn't want to store leftover chopped onion in my already overloaded fridge. This is a dynamite chicken dish. Try it! Wowsers good basil and garlic reall good in this combo,do not leave the sundried tomatoes cooking,even if someone is yelling come here
