Step by Step Method

Step 1

Place the bacon under a preheated hot grill (broiler) and cook for 1-2 minutes or until crispy.

Step 2

Place the maonnaise, garlic, lemon juice, chives and chicken in a bowl and mix well to combine.

Step 3

Spread both sides of the bread with butter.

Step 4

Divide cheese and chicken mixture between 4 slices of bread and sandwich with another slice of bread.

Step 5

Heat a large non-stick frying pan over low heat and cook the sandwiches in batches in necessary for 3-4 minutes each side or until golden the cheese is melted.

Great sandwich! I was so tired from working all day, and didn't want to make a huge meal....this was perfect. Originally planned for lunch, but tonight it was dinner. Very satisfying and a hit with all. Thanks for sharing! Made for FYC tag game.

Oooh, Pat, this was soooo nice! Decadent :) I tagged this, and then got home late due to heavy traffic, this was a fabulously quick and satisfying dinner after a long day and rauiny weather :) I had everything except sourdough bread, so used the regular toasting bread I had, will make this again with something special though!! I cooked a chicken breast fillet along with the bacon, and used fresh chives from the garden. Even my pup Buddha sat hopefully by the stove inhaling those oh-so-wonderful aromas, hoping some of it was coming her way! (No ;) lol) I only made 2 sandwiches, but made all the filling, so there's more for today :) Thanks Pat, this was awesome!!!!!!!!!!!!!!!! made for Consideration Tag Game
