Step by Step Method

Step 1

In a small bowl mash the avocado and whisk in the mayonnaise, lemon juice, salt and pepper and then refrigerate for up to one day.

Step 2

With a serrated knife trim the bread slices and discard crusts. Spread a layer of the avocado mayonnaise onto one slice of six bread slices. Arrange slices of chicken, bacon and tomato on top; cover with the salt greens and cover with the remaining bread slices.

Step 3

With a serrated knife, cut sandwiches in half. Serve immediately or cover with damp tea towel or paper towels and refrigerate until ready to serve.
