The ingredients are:
  • 1 avocado, peeled and pitted
  • 4 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt
  • Pepper
  • 12 slices wheat bread
  • 4 slices chicken, roasted
  • 4 slices bacon
  • 4 slices tomato
  • Baby salad greens

How to Make

  • Step 1: In a small bowl mash the avocado and whisk in the mayonnaise, lemon juice, salt and pepper and then refrigerate for up to one day.

  • Step 2: With a serrated knife trim the bread slices and discard crusts. Spread a layer of the avocado mayonnaise onto one slice of six bread slices. Arrange slices of chicken, bacon and tomato on top; cover with the salt greens and cover with the remaining bread slices.

  • Step 3: With a serrated knife, cut sandwiches in half. Serve immediately or cover with damp tea towel or paper towels and refrigerate until ready to serve.
