Step 1

Spray bread with olive oil spray.

Step 2

Place in toaster oven or under the broiler for 30 seconds. Remove and place cheese on toast. Return to oven for 2 minutes or until cheese melts.

I agree about this being the perfect accompaniment for soup. Also great just as a snack or for breakfast. Manchego is one of our favorite cheeses. Comfort food at its finest.

I used bialys to make these cheesey toasts and served it alongside a green salad. Yummy and easy peasy for a quick lunch. I can see how these are not only good on their own but would also make for a great side to a savory soup. Thank you ellie for sharing.

Lovely appetizer made on a baguette slice, toasted side down, cheese on untoasted side, like it said let it go back in the oven to let the cheese melt Manchego cheese has a lovely mild, mellow almost sweet flvour. I think this is a cheese tha almost everyone will enjoy. When serving I added a bit of Thai Chili suace for colour, Manchengo cheese is very expensive here - it was on sale for $4.75 - 100 grams, that's expensive but it was worth it.
