Step by Step Method

Step 1

In large pot, melt butter over medium-high heat, cook onion and garlic for about 3 min or until tender. Add chicken broth; bring to boil over medium-high heat. Add vegetables, bring to boil. Reduce heat to medium and cook 10 minutes or until vegetables are tender crisp.

Step 2

Whisk flour into milk until smooth; gradually stir into simmering soup along with paprika, mustard and hot sauce; bring back to a boil stirring often. Cook for about 5 minutes or until slightly thickened.

Step 3

Remove from heat, mix in cheddar cheese stiring until melted. Season to taste with salt and pepper.

This hit the spot for a easy tasty dinner, I served it with garlic bread and a small salad. I used old cheddar I think it's the best for this kind of soup, increased the garlic and hot sauce, I also used frozen thawed broccoli in place of mixed vegetables, this was really enjoyed, thanks!
