Step 1

Heat panini maker according to manufacters directions or heat a ridged pan over medium high heat.

Step 2

Lay bread on a work surface and brush one side of each slice with olive oil; turn bread over and spread two slices with mustard and layer evenly with apple and cheese slices. Cover with remaining bread; oiled sides out.

Step 3

Place sandwiches on panini press or pan.

Step 4

Cook until bread is toasted and cheese is softened. If using pan, flip sandwiches to cook other side (about 3-5 minutes per side) or about 4-5 minutes total in the press.

Step 5

Cut sandwiches in half.

Just loved the gooey cheese with the crisp apple and the Dijon mustard. The only change I made was I made it in a sandwich press which has flat plates instead of ridged ones of Panini and I didn't need to use the oil. Thank you ellie for a great lunch, made for Alphabet Soup Game.
