"After a recent illness I was having a lot of trouble with my blood sugar levels and found myself having to eat no carbs which meant no bread, rice, potatoes or pasta so starting surfing the net and came up with a carb free pizza bases."
Process the cauliflower in a food processor until finely chopped.
Place chopped cauliflower in a microwave safe bowl, cover and microwave on high for 8 to 10 minutes or until very tender and then drain through a fine sieve, pressing down well with a wooden spoon to remove excess liquid.
Combine the cauliflower, egg and the parmesan in a bowl.
Preheat oven to 230C/210C fan forced.
Line a 30cm round pizza tray with baking paper and press the cauliflower mixture firmly into the tray and bake for 20 minutes or until golden.
Top with favourite sauce and toppings and bake in the oven till golden, about 7 to 10 minutes.
